Berries in a basket

  • 3 egg whites
  • 3/4 cup sugar
  • 1/4 teaspoon Cream of Tartar
  • 1/2 teaspoon Vanilla

Fruit salad

  • 1/2 cup Pomegranate seed
  • 1/2 cup Blueberry
  • 1/2 cup Raspberry
  • 1/2 cup Blackberry
  • 1/2 cup Cantalope diced

Whipped cream

  • 1 cup Heavy Cream
  • 1 teaspoon Vanilla Sugar


  1. Place egg whites in a large clean stainless steel bowl; let stand at room temperature for 30 minutes. Beat the egg whites, vanilla and cream of tartar on medium speed until soft peaks form. Gradually beat in sugar on high until stiff peak forms. 2. Place meringue mixture in pastry bag with star tip. Pipe meringue onto parchment paper to form eight nests 3. Bake at 275° until set and dry. Turn off oven and do not open door; leave meringues in oven for 45 minutes. 4. While Meringue is in oven, prepare the fruit salad; dice melon and mix berries. 5. Whip cream in clean bowl with vanilla sugar until soft peaks form 5. Place Fruit salad in nests and top with whipped cream 6. Share with all your new friends

Bucatini with baked Brussel sprouts and garlic

Preparation time 1 hour

Delicious factor 9/10



Brussel sprouts 1 pound

Green beans half a pound

Roma tomatoes 6

Parmegiano reggiano grated half cup

Olive oil 4 to 5 oz.

Garlic 5 cloves minced

Grilled chicken breast 3 (optional)

Salt and pepper to taste



Preheat oven to 350 F

Wash and cut Brussel sprouts in half length wise

Trim and clean green beans, cut into 2 or 3 pieces each, about same length as Brussel sprouts

Cut each tomato into 6 wedges, cutting out the stem

Put on baking tray, drizzle with olive oil and course salt bake for about 25 mins.

(I did chicken on BBQ, sliced and just placed on tray to keep warm in oven after the vegetables were also cooked)


While vegetables bake in oven, put large pot of slightly salted water on stove and bring to a boil(no need to add oil to water, this is an old wives tale)

Once water boils add 900 grams or 2 pounds of pasta ( I like bucatini #12 for this dish)


Lets put it all together!;

Once pasta is cooked, vegetables(and chicken if needed) are in oven staying warm

Put 4oz. Of olive oil to get warm(not cook) In a pan on the stove top, you are infusing the oil with garlic, not browning it.

Strain pasta then in extra large bowl or pot mix the strained pasta, vegetables(chicken) and olive oil

Add salt and pepper fold it all together adding the Parmegiano slowly at a time.

This process is like very gentle as not to break anything, add more oil as desired.

Roasted Chicken basil and lime



Roasted chicken with Basil and lime

Serves 4

Cooking time 50 to 60 minutes

Prep time 15 minutes



1 Chicken(free range or organic preferably)

Basil fresh 18 leaves or can use pesto as well 4oz

2 limes

olive oil

salt and pepper to taste



Cut chicken in 4

Marinate chicken for 1 hour up to 24 hours

marinade; decimate basil with juice of 2 limes, you can use a blender, or food processor or the mix wands are my choice.

Zest of one lime

olive oil

rub chicken with olive oil, then brush or rub with basil lime mix.

and pinch of salt and pepper


Cook at 275 F for 45 minutes, then for last 10 minutes turn to 425 F


put chicken on plate and sprinkle with lime zest


Baked Egg with Spinach, garlic and tomato





Time to cook; 20 min

Prep time; 15 min


  • Eggs separated
  • 3 cups loose leaf spinach
  • 8 cherry tomatoes
  • 1 clove garlic
  • Olive oil teaspoon
  • Salt and pepper to taste
  • 6oz Gruyere cheese grated(or any favourite cheese will be fine)



Drop olive oil in warm frying pan, add one emancipated garlic clove(with knife or garlic press).

Cut tomatoes in half.

Add spinach and tomato, cover for 4 to 5 minutes, till spinach is wilted.

Separate eggs. Egg whites into bowl and whisk briskly for 2 to 3 minutes till it foams.

Place spinach tomato mixture in baking tray, pour in foamed egg whites, drop in yolks.

Bake at 400 F for 18 minutes, cover the top with the grated cheese and bake for last two minutes.
