Winter Turkey Chilli

  • 1 tablespoon olive oil
  • 1 can chick pea (15oz)
  • 3 cans diced tomato
  • 3 pounds ground turkey
  • 1 orange pepper diced
  • 1 yellow pepper diced
  • 2 tablespoons canned chipotle in adobo
  • 3 tablespoons chilli powder
  • 3 ounces tomato puree
  • salt and pepper to taste
  • 6 cloves garlic chopped
  • 2 large cooking onions diced
  • 2 cans kidney beans (30 oz)


  1.  In a large pot, heat oil over medium-high. Add onions and garlic. Season with salt and pepper, and cook, stirring until softened, 3 to 5 minutes.
  2.  Add tomato paste, chili powder, chipotles, and peppers. Cook, stirring, until mixture has begun to brown, 2 to 3 minutes. Add Turkey, and cook, breaking it up with a wooden spoon.
  3.  Add tomatoes with their juice, and beans. Bring to a simmer. Cook over medium heat until chili has thickened slightly and beans are tender, 10 t0 15 minutes.

Ontario pork loin stuffed with apricot and ginger

  • 1 Ontario pork loin
  • 1 shallot, diced
  • 1/2 cup Dried apricots
  • 1 cup Diced old bread
  • 1 tablespoon Grated ginger
  • 2 fluid ounces white wine
  • 6 fluid ounces Orange Juice
  • 1 teaspoon Grated ginger
  • dash salt and pepper to taste


  1. Preheat oven to 400 F. With a pairing knife cut a slit right in the middle of the face of the pork loin, insert boning knife and wiggle it back and forth to make the cut as deep down the centre as possible, repeat the same process down the other end of the pork loin, the two newly cut holes should meet . Sauté the diced shallot in olive oil until translucent , add the ginger and deglaze with white wine add the bread and cover on low for 5 minutes. Let cool. When it is cool to the touch, the mixture should be soft enough to mash with your hands. Season lightly with salt and pepper. Stuff this down the hole you cut in the pork loin, you can stuff down both sides. Place pork in oven in baking tray for 10 minutes to sear, then turn down to 275 F. Pork should reach internal temperature of 154F While pork is in oven, pour the orange juice in a small pot, bring to a simmer and add the ginger, slowly simmer till there is 1,5 oz left of orange juice, it will get deep orange and become thick as a nice sauce. Let stand When pork is ready rest for at least 15 minutes, I slice it about 1 inch thick, put on plate or platter and serve with sauce. Bucatini with baked Brussel sprouts and garlic




Cook time 1 hour

Preparation time 1 hour

Delicious factor 9/10



Brussel sprouts 1 pound

Green beans half a pound

Roma tomatoes 6

Parmegiano reggiano grated half cup

Olive oil 4 to 5 oz.

Garlic 5 cloves minced

Grilled chicken breast 3 (optional)

Salt and pepper to taste



Preheat oven to 350 F

Wash and cut Brussel sprouts in half length wise

Trim and clean green beans, cut into 2 or 3 pieces each, about same length as Brussel sprouts

Cut each tomato into 6 wedges, cutting out the stem

Put on baking tray, drizzle with olive oil and course salt bake for about 25 mins.

(I did chicken on BBQ, sliced and just placed on tray to keep warm in oven after the vegetables were also cooked)


While vegetables bake in oven, put large pot of slightly salted water on stove and bring to a boil(no need to add oil to water, this is an old wives tale)

Once water boils add 900 grams or 2 pounds of pasta ( I like bucatini #12 for this dish)


Lets put it all together!;

Once pasta is cooked, vegetables(and chicken if needed) are in oven staying warm

Put 4oz. Of olive oil to get warm(not cook) In a pan on the stove top, you are infusing the oil with garlic, not browning it.

Strain pasta then in extra large bowl or pot mix the strained pasta, vegetables(chicken) and olive oil

Add salt and pepper fold it all together adding the Parmegiano slowly at a time.

This process is like very gentle as not to break anything, add more oil as desired.

Roasted Chicken basil and lime



Roasted chicken with Basil and lime

Serves 4

Cooking time 50 to 60 minutes

Prep time 15 minutes



1 Chicken(free range or organic preferably)

Basil fresh 18 leaves or can use pesto as well 4oz

2 limes

olive oil

salt and pepper to taste



Cut chicken in 4

Marinate chicken for 1 hour up to 24 hours

marinade; decimate basil with juice of 2 limes, you can use a blender, or food processor or the mix wands are my choice.

Zest of one lime

olive oil

rub chicken with olive oil, then brush or rub with basil lime mix.

and pinch of salt and pepper


Cook at 275 F for 45 minutes, then for last 10 minutes turn to 425 F


put chicken on plate and sprinkle with lime zest
